We've been constantly trying to expand our repertoire of UK and Irish cheeses. Right now we've got a couple of really nice ones in both our cases.
Kirkham's Lancashire--Cheesemonger Song describes this cheese as "fluffy" which I have to say is a fairly apt description. Light, almost with a yogurty tang this is a wonderful summer cheese. Throw this on top of a burger instead of cheddar and you have the perfect combination. Make sure you ask one of us about the 3 day curd process used to make this cheese. Neat-o.
Appleby's Cheshire--Moist, flaky, and the last of the raw milk cheshires.
Hawes Wensleydale--Wallace and Gromit's favorite cheese. Oh, and totally delicious. Great for sandwiches or snacking.
